So, I am making this chicken chili right now and let me say it needs a little something. I did drop a bay leaf into the crock pot when I started cooking, but it needs a lot more. I just added a little more cumin, chili powder, and about 1/2 of a 7 oz can of green chilies. It seems like it needs a touch more broth and maybe some corn starch to help thicken it. You could also do a little bit of flour instead of corn starch if you need to. I will make a few adjustments to this and will let you know what I did and how it turns out.
ReplyDeleteI did make this recipe before http://allrecipes.com/Recipe/White-Chili-with-Chicken/Detail.aspx That one came out really well, I just put it all in the crock pot and let it cook all day. It was really good. I like the comments and suggestions and read through them before trying any recipe so I am aware of any issues before hand.
I ended up adding the whole can of green chilies. I did not use it in the quesadillas. I also added extra garlic, cumin, cilantro, and chili powder. The lime juice did help a bit as well. For the quesadilla's I only made 2 big ones (2 tortilla's each) and cut them into 6ths. Each person got 2 pieces along with the chili. I also served with a dollop of sour cream, chopped cilantro, and salsa. This meal ended up being very good and there is enough left over for lunch. It would make a great filling for a tortilla with a little bit of cheese and whatever toppings. If you do use the leftovers as a tortilla filling, you may want to make sure it is not too wet and drain off the extra liquid.
