Dinner tonight- Jambalaya!!!!!
So tonight for dinner I got the Zatarains Jambalaya on sale as one of those BOGO's early this week. To make it stretch and feed my family I am adding some turkey smoked sausage I got on sale for $2 and I will go tonight and buy about 1/2 a pound of shrimp (on sale at Publix for $5.99 a pound). This will make 6 servings.
Ingredients:
2 1/2 cups water
2 Tbsp Vegetable oil (optional)
1 package Zatarain's Jamalaya mix
1 pound meat of your choice: smoked sausage, thinly sliced or cubed chicken, cubed ham, or peeled and deveined shrimp.
Preparation:
Bring water and oil (if using) to boil in a medium saucepan. Sir in rice mix and meat of your choice; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender.
Remove from heat. Let stand 5 minutes. Fluff with fork before serving.
Tips:
If using shrimp, add shrimp to rice mixture during the last 5 minutes of cooking.
Nutrition content. If my figuring is correct I have that this dish made with 1/2 a pound of turkey smoked sausage and 1/2 a pound of shrimp it comes out to 304 calories and 6.5 grams of fat. (That is without the oil!)
Serve this with a nice salad loaded with fresh veggies and you have a great meal!!!!
Cost of this meal- Since I used coupons, BOGO's, and am only using 1/2 a pound of shrimp I figured that this meal cost just under $6 total. That is just under $1 per serving!!! Adding a salad (prepackaged salad mix was also on the BOGO list this week) it comes out to about $8 total. Who says you can't serve a good meal on a budget????
