Wednesday I usually do not cook for my family. Our church has a dinner on these nights so that is what we do. I have decided that today I am going to post my menu for the week so you can see what we had before I started the blog.

Monday- Slow Cooker BBQ Ribs and home made Mac & Cheese
Tuesday- Pork Chalupas
Thursday- Spaghetti
Friday- Jambalaya with sausage and shrimp
Saturday- Fish

I did purchase everything I needed this week and after using coupons I spent $120 and saved just over $40. I also got a few things that we really did not need, but I have a hard time passing up the buy-one-get-one deals! :)

The BBQ ribs turned out amazing! I took the slab of ribs that I got (I purchased about 4 lbs for $2.99 a pound) and I cut them into sections of about 2 ribs each. I then put them under the broiler for about 5 minutes on each side until browned. Meanwhile I got the crock pot turned on and started to get it heated up. I also cut  an onion into thin slices and placed it into the bottom of the crock pot.

After the ribs came out of the broiler, I laid them in the crock pot and put on hig for about 4 hours. I then added a bottle of bbq sauce (I used Sweet Baby Rays- one of those BOGO's) and set it on low for about another 3 hours. When it was time to eat, they were fall off the bone tender and finger licking good!

For the Mac & Cheese- I  boiled about 1/2 a box of elbow noodles, you can use whatever noodles you like or have on hand. While the water was heating in another sauce pan I melted 1 Tbsp butter. Once the butter was melted I added 1 Tbsp flour to make the rough. I then added about 2 cups of milk and allowed it to thicken. You have to be careful not to allow the milk to boil or it will separate, make sure you lower the heat! I also added a little bit of pepper and some chicken bullion for flavor! Once the milk is thickened you add the cheese. I used a 4 cheese Mexican blend that I got on sale. Add the cooked drained noodles to the sauce and put into ta baking dish. Add buttered bread crumbs on top. I then put it in the refrigerator and ran all my errands and went to soccer.  When I came home I heated the oven and put the mac & cheese in the oven for about 15 mins until it was hot and then set the broiler for a few mins to brown the bread crumbs! It was really good!!!!
