Dinner 10/29/2010

 Flank Steak with Caramelized Shallots  
Prep time: 10 minutes Marinate time: all day 
Cook time: 20 minutes

cup sherry vinegar

garlic clove(s), crushed

teaspoons Dijon mustard, plus more for serving

tablespoon Worcestershire sauce

pounds flank steak

shallots , halved or quartered

coarse salt and freshly ground pepper, to taste

Preheat grill to medium or heat the broiler. 

[1] Whisk together the oil, the vinegar, garlic, mustard, and Worcestershire sauce in a large plastic bag. Place steak in bag; turn to coat with marinade. Let steak marinate, all day. 

[2] Heat an additional 2 tablespoons oil in a large skillet over medium-high heat. Add shallots; cook, stirring often, until just golden, 2 to 3 minutes. Reduce heat to medium-low. Season with salt. Cook, adding 1/4 cup water in batches as needed to keep shallots from sticking, until tender and caramelized, 15 to 18 minutes. Transfer shallots to a plate and tent with foil. 

[3] Meanwhile, grill (or broil) the steak, turning once, 7-8 minutes per side for medium-rare. Transfer to a cutting board and let meat rest for 5 minutes. Slice against the grain into 1 inch slices. 

[4] Serve the steak with shallots. 





Spicy Hash Browns   
Prep time: 10 minutes Cook time: 30 minutes

teaspoon black pepper

medium baking potatoes , finely diced

olive oil cooking spray

Preheat oven to 400 degrees. 

[1] Combine the oil, paprika, chili powder, salt, red pepper and black pepper in a large bowl; stir well. Add potatoes; stir well to coat. 

[2] Place potatoes in a single layer on a cookie sheet coated with cooking spray. Bake for 30 minutes or until browned.
