12/25/2010 Grilled Herb Flat Iron Steak with Cheesy Baked Potatoes

 Grilled Herb Flat Iron Steak 
Prep time: 10 minutes Marinade Time: All Day
Cook Time: 12 minutes


1 1/2pounds flat iron steak (can sub flank steak)
2tablespoons olive oil
2tablespoons soy sauce (low sodium)
2tablespoons balsamic vinegar
1/2cup teriyaki sauce
2tablespoons Worcestershire sauce
1teaspoon dried thyme
1teaspoon dried rosemary
1teaspoon dried tarragon
1teaspoon dried basil
2tablespoons molasses
1teaspoon brown sugar
 coarse salt and freshly ground pepper, to taste


per serving: 355 calories; 37 grams protein; 16 grams total fat; 0 grams fiber; 6 grams saturated fat; 15 grams carbohydrates; 59 mgs cholesterol; 1053 mgs sodium; 8 weight watcher points
 [1] Prop open a large freezer bag and add the olive oil, soy sauce, vinegar, teriyaki sauce, Worcestershire, dried herbs, molasses, brown sugar and salt and pepper. Using your hands on the outside of the bag, mix to combine.

[2] Add the steak to the bag and turn to coat. Place in the refrigerator and let marinate all day.

[3] Heat the grill to medium-high heat.

[4] Remove the steak from the bag and discard the marinade.

[5] Grill the steak for 10-12 minutes turning once. Depending on the thickness of your steak, you might need to adjust the cooking time. Remove the steak from the grill and let rest for 2-3 minutes. Slice against the grain into thin strips. 






Cheesy Baked Potatoes   
Prep time: 10 minutes Cook time: 30 minutes 

4russet potatoes , peeled and cubed
1/2yellow onion , chopped
1 1/2cups chive flavored cottage cheese
1cup sour cream
1cup shredded cheddar cheese


per serving: 314 calories; 15 grams protein; 17 grams total fat; 3 grams fiber; 11 grams saturated fat; 26 grams carbohydrates; 45 mgs cholesterol; 359 mgs sodium; 7 weight watcher points
 [1] Place potatoes in a large pot of water and boil until tender when pierced with a fork.

[2] Preheat oven to 350 degrees. Butter a casserole dish.

[3] In a large mixing bowl, combine potatoes, onion, cottage cheese, and sour cream. Transfer mixture to the prepared casserole dish. Top with cheddar cheese.

[4] Bake for 30 minutes or until done.
