Add onions and garlic; season with salt and pepper, and toss. [2] Sprinkle roast with salt and pepper; place on top of vegetables, and drizzle with Worcestershire and wine. Cover; cook on low for 8 hours. During the last 2 hours, add the carrots and continue to cook. [3] Transfer roast to a cutting board; thinly slice against the grain. Place vegetables in a serving dish; pour pan juices through a fine-mesh sieve, if desired. Serve roast with vegetables and pan juices. Buttermilk Mashed Potatoes

4 medium baking potatoes , peeled and cut into 2 inch chunks
3 tablespoons butter
1/2 cup buttermilk
coarse salt and freshly ground pepper, to taste
per serving: 266 calories; 6 grams protein; 9 grams total fat; 3 grams fiber; 2 grams saturated fat; 42 grams carbohydrates; 24 mgs cholesterol; 45 mgs sodium; 5 weight watcher points [1] Cook the potatoes in a pot of boiling water until they are very soft, 15 to 20 minutes.
[2] Drain in a colander and return to the pan. Using a hand masher or mixer, mash potatoes.
[3] Add butter and mix until melted and smooth. Mix in buttermilk. If potatoes are still too thick, add more buttermilk, 1 tablespoon at a time, until they are of the desired consistency. Season generously with salt and pepper.
