Dinner 10/21/2010
So tonight's menu is spaghetti. I know what most of you are thinking, boring spaghetti. Well I am doing it a little different tonight. I am using ground chicken and lots of veggies. This is one of my secrets to get the kids to eat veggies without knowing it. My oldest does not like mushrooms, or so he thinks. What I do is chop the mushrooms up very small as well as carrots and onion. You can use a food processor or food chopper. I also will be using some spinach tonight since I have some fresh spinach in the refrigerator. There again, through it in the food processor and chop it all up. I then cook the ground chicken and add the veggies. I also add just a splash of wine (I like to use a nice red wine, like a merlot) to give the veggies and the chicken a darker color and more flavor. Once the chicken and veggies are cooked, add your favorite spaghetti sauce and heat until heated throughly. Sometime I even add a little bit of V8 juice to my sauce. It is a nice way to add some nutrients and flavor. Then of course serve with boiled spaghetti noodles, I am using whole wheat pasta. I serve with Parmesan cheese sprinkled on top and with a nice side salad.

ReplyDeleteAfter figuring calorie and fat content for dinner tonight, this will make about 8 servings. Each serving has about 308 calories and only 10 grams of fat. Since you use ground chicken and a lot of fresh viggies you can stretch this dish to feed a lot! It is also great as leftovers!!!!
